Effect of Temperature and Storage Time on Some Biochemical Compounds from the Kernel of Some Walnut Cultivars Grown in Romania

Walnut kernels are appreciated not only for their mineral content, vitamins, proteins, and valuable lipids, but also the presence of polyphenolic compounds biogenic amines. The temperature storage time effects on some biochemical from collected eight walnut genotypes grown at Fruit Growing Research Extension Station (SCDP) Valcea, Romania, were studied. In general, phenolic carotenoid followed opposite trends during short-term in cases medium-term storage. both cases, there was a reduction concentration long-term storage, which more pronounced carotenoids. most efficient method preserving kernel’s content freezing. Keeping kernel room assured smallest decrease. Depending cultivar, preservation can be extended to five months by −20 −18 °C without loss compounds, while period shorter than (but certainly longer three months) could recommended 3–4 °C. it an option short (about months). None methods adequate if losses recorded carotenoids taken into account.
